Ooey gooey, cheesy goodness.
The grilled cheese is an easy and quick meal to warm you up after a walk across campus in subzero temperatures.
All you need is a pan and a spatula.
I have always liked to make new foods and have perfected plenty of easy recipes since I started cooking. Freshman year at Carroll, I realized that the meals provided just weren’t satisfying the foodie in me. I decided to start cooking for myself.
This column aims to help you upscale some of your quick and easy college meals. Don’t worry, I’ve already gone through all the trial and error, so you don’t have to.
What’s the secret to making the best grilled cheese? Mayonnaise. Just spreading some mayonnaise on the inside of each slice will give your sandwich that creamy inside and take your grilled cheese from amateur to gourmet.
I like to pair it with a warm cup of tomato soup. Don’t waste your time. Canned tomato soup is just as good as it is homemade.
To add a little more fun, add a thin layer of raspberry preserves in the middle. It may sound unconventional, but if you are a fan of the sweet and salty flavor combination, it’s the way to go.
Ingredients:
- Two slices of sourdough bread
- Two slices of cheddar
- One slice of muenster
- One tablespoon of butter
- Approximately two tablespoons of mayonnaise
- Approximately one tablespoon of Raspberry Preserves (optional)
The Recipe:
- Spread mayo over one side of each slice of sourdough bread.
- Set your burner to medium/low heat and place a tablespoon of butter into your pan.
- Assemble your sandwich: get one slice of bread, mayo side up, and place two slices of cheddar, a thin layer or raspberry preserves (if you wish), one slice of muenster, and finish with the second slice of bread.
- Place your sandwich on the pan with the melted butter, let cook until the bottom slice is golden brown.
Tip: You can check this by holding your sandwich together with one hand on the top and use a spatula to lift up the bottom.
- Flip and cook until the cheese is melted and the other slice is golden brown.
Tip: If your bread is cooking fast and your cheese is not melting, place a pan on the pan to trap the heat, this should help the cheese melt faster.
- Take off the pan and let the sandwich rest for 2 minutes.
- Cut in half and enjoy!
