College cooking: breakfast sandwich

Waking up to the smell of bacon is the best way to start any morning. 

My family went camping throughout my childhood and our go-to meal was always the breakfast sandwich. My dad always cooked my bacon extra crispy and put an over-easy egg in my sandwich. 

Eventually, I asked to start making them with him and that became something I looked forward to each trip. 

Now, whenever I need a hearty breakfast, I turn to the classic breakfast sandwich. 

The best thing about breakfast sandwiches is that you can add whatever you want on the inside. Bacon or sausage patty, cheese or no cheese, scrambled or fried eggs? You can personalize it to your liking. 

While everyone does their breakfast sandwiches differently, I find that this recipe is the best way. 

Helen’s Breakfast Sandwich: A slightly burnt English muffin, crispy bacon, and an over-easy egg with a sprinkle of shredded cheese. 

You can make the bacon ahead of time if you wish to slip in the sandwich each morning. 

I like my bacon crispy and burnt and find that cooking it on the skillet takes way too long. Instead, I cook my bacon in the oven. It’s a nice hands-free way to cook your bacon so you don’t have to worry about flipping it repeatedly. 

For crispy bacon, I line a baking sheet with foil and place all of my bacon side by side. I set my oven to 400° F and immediately put my tray in, you don’t need to wait for the oven to heat up. Set a timer for 20 minutes. Now flip the bacon and put it in for an extra 10 minutes. Once that’s done you’ll have amazingly crispy, burnt bacon. If you like floppy bacon better, still set the oven to 400° F and flip the bacon after 10 minutes and then leave it in for 10 more.

Ingredients 

  • English muffin
  • Shredded cheddar cheese
  • Eggs
  • Bacon 

The Recipe for Helen’s Bacton Breakfast Sandwich:

  1. Cook the bacon, you can cook it on a skillet or in the oven as i described above.
  2. Toast your English muffin to your desired level.
  3. Once the English muffin is toasted place a small handful of shredded cheese on each half and let it melt.
  4. Start cooking your egg on a skillet however you like. (I like it over easy). 
  5. When your bacon is done in the oven, get two slices and cut both in half. Make a tic-tac-toe shape on top of one-half of the English muffin. 
  6. Once your egg is done, place it on top of the bacon. 
  7. Take the other half of the English muffin and put it on top. 
  8. Enjoy!
